Same here but I cannot find the ControlCenter in the menubar as the rightmost part of it does not show any icons except for Spotlight. I'm lost.
Fast user switching is off by the way...

My menubar icons are back.
Accomplished that by turning OFF WiFi in System Preferences -> Dock & Menu Bar

That said, I very much hope it's not actually removed. I very much prefer the classic layout over the standard one, and might opt to switch to another mail clients if it's removed.
Same here... Never ever found a way to get back to that, far better, 'classic view'
I may be setting up an old Mac with Mojave, select 'classic view' in mail.app and then upgrade it to Catalina.
That will work, in fact, on my MacBook Pro, running Big Sur, classic view has always been there and it still is.
So, it needs to be ON when upgrading to Catalina and if it's ON, it will remain ON, even although the checkbox is gone under Catalina.
Now praying that upgrading from Big Sur will not destroy it... Will have to buy a new Mac first, the MacBook Pro (2014) cannot run Monterey, so it seems... ;-(
